Add eggs, one by one, beating well after each addition. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting. Add half the dry ingredients to the butter mixture and mix until combined. Add the canola oil; then beat for another 2 minutes. Add the egg, lemon juice, lemon zest, and lemon extract.
